Aromatic wine made from montepulciano d’abruzzo grapes

YPPOCRAS
is the result of careful research of recipes and medieval traditions. My passion for food and the eno-gastronomic traditions of our ancestors brought me, in the beginning, to the preparation of a few litres of this ancient drink to serve in my restaurant, “the TAVERNA of the MASTROGIURATO” in Lanciano. With time, I matured the idea of producing it by hand to give the opportunity to everyone to savour this noble drink, long ago consumed in convivial moments, above all at the end of meals, in the most affluent circles. Nature and handcraftsmanship are the prerogatives of this wine which took over four years and hundreds of tests to harmonize the numerous spices present. It should be consumed fresh and can also be proposed as an aperitif with a bit of seltzer.
A Drop of History... from an ancient medieval recipe Yppocras The name IPPOCRASSO is attributed to the renowned Greek doctor IPPOCRATE. (V sec. A.C.) Yppocras was originally a wine aromatized with spices and sugar, with an alcohol content between 13% and 15% vol. In the Middle Ages both spices and sugar were considered luxury products, classified together, both having medicinal virtues. In fact, doctors recommended drinking Yppocras for its digestive qualities. It was consumed exclusively by the nobility, in the best courts, as a digestive, for the pleasure of a drink with a determined and persistent taste. It is the only digestive in the world which has a proven historical existence dating back 9 centuries! With the increase of distilled alcohol, since the XVII century like armagnac, cognac, brandy, grappa and vodka, Yppocras has been slowly forgotten. Today, the liquor shop YPPOCRAS, to honour this noble drink, has revived the ancient recipe, in a version with more alcohol, giving the possibility to experience tastes and pleasures long forgotten

Technical Information Grape: Montepulciano of Abruzzo D.O.C. Zone of production: Frentana Hills Production Techniques: rigorously natural materials are used in production, including Montepulciano grapes from Abruzzo, over ten spices coming from various parts of the world, top quality alcohol of vinosa origin and extra refined sugar. The wine is produced using a cold maceration process, with different times for each spice, then the alcohol is added and lastly the sugar, dissolved manually. Filtration happens naturally. Bottling: after approximately six months. Organoleptic Characteristics Ruby red colour, limpid and consistent. Intense scent, persistent, with wide notes of spices like cinnamon, cloves, cardamon, macis, ginger, china calissaja, oak and tobacco. To the palate it is sweet, warm, pasty and suitably tannic. A balanced and harmonic, intense and persistent wine of excellent quality. The alcohol content is 22% vol., which guarantees a long conservation.
